Alto Adige Sauvignon Rachtl Riserva 2015 Tiefenbrunner

Variety: Sauvignon Blanc 100%

The grapes of the precious and sought after white wine, Sauvignon Rachtl, are grown and harvested in Aica di Sotto, a hamlet of Fiè allo Sciliar.

Vineyard: it has a south-east exposure and an altitude that varies from 590 meters above sea level to 630.

The soil, in the most superficial layers, has a prevalence of sand with medium silt content with high
salt levels and a low humus content. There is also the presence of gray porphyry. In the lower layers there is a majority of the dust of calcareous sandy rock. This particular rock combination gives the wine the
particular characteristic of mineral notes, flint stone and a marked acidity.

Type of cultivation: it is espalier with Guyot pruning, while the density of vines per hectare is 8,000. The vineyard has an age, in its older plants, of 22 years.

The yield per hectare is 40 hectoliters.

This Sauvignon Blanc, despite being harvested at full maturity, preserves its acidity in a surprising way. After a maceration of eight, twelve hours and a gentle pressing, half of the must is left to ferment in tonneaux, while the other half is placed in large wooden barrels. In the same fermentation containers, wine remains for almost a year. In order not to alter the mineral notes, they carefully avoid the malolactic transformation. Subsequently they reassemble the two parts in steel drums, where the wine is clarified by fall, naturally, for six months. Once bottled, it ages for another 12 months in the bottle.

On the nose it immediately stands out as a finely elegant wine, the head aromas are of exotic fruit, with the passion fruit. As soon as we turn the wine into the glass, the wonderful mineral notes of flint, graphite and schist arrive.

On the palate it is a beautifully balanced and refined wine. Against a noticeable sensation of silkiness, we have the intuition of minerality on the nose, turning into a tactile sensation.
