Bourgogne Aligoté 2018 Domaine Cruchandeau

Variety: 100% Aligoté

Reasoned agriculture, that is, without the use of pesticides and chemical fertilizers.

The grapes come from a 50-year-old vineyard, with an altitude of 270 meters above sea level, while the sun exposure is in the east.

The land is made up of white marl. White marl is a compact stratification of clay, calcium carbonate and marine fossils, where the majority percentage is that of limestone.

After the harvest, carried out manually in 20 kg boxes drilled with selection of the bunches, it gently presses the bunches, and using only indigenous yeasts, awaits the start of alcoholic fermentation. The same occurs in low temperature stainless steel containers.

Refine in the same stainless steel containers with the residues of the fermenting yeasts.

Straw yellow color.

The scents of white and delicate flowers, citrus and fresh fruit stand out on the nose. The yellow apple, the cedar and acacia and orange blossom. Good quality, due to clean notes, without annoying cracks, and similar complexity.

On the palate it is typically supported by admirable freshness, and a good volume of sip. The minerality supports it until closing, prolonging the pleasant sensations, which flow into aromas of lime, and of precious sea.

In the complex of the three aspects Julien Cruchandeau designs a classic and traditional Aligoté, which among French white wines, has the advantage of being a super gastronomic wine, that is, suitable for accompanying various dishes. From those of the sea, to sautéed vegetables, cheeses and white meats on the spit. Try it with Genoese green beans.
