Composed of vineyards classified as Grand Cru, all in Mesnil sur Oger in the Côte de Blancs. 61% of the cuvée comes from the 2009 harvest, while the remaining 39% from the 2008 harvest. 45% of the mass has been aged in barrique. Beginning of the refermentation in April 2010, unluckily in January 2017.

Bright golden yellow color

The nose has amazing aromas of fresh pastries, panettone and vanilla. Followed by candied citrus fruit, yellow flowers in particular the spring mimosa. Some notes of locust honey and marine notes enrich the overall appearance with particular scents.

Cultivator direct since 1982, Pascal Doquet managed the Doquet Jeanmaire family estate from 1995 to 2003, both as an agronomist and as an oenologist.

In 2004, after the purchase of the shares from the sisters, it became the sole owner, and is therefore free to grow the vineyard as best it likes, approaching without further delay to organic farming.

It produces fertilizers by itself, creating compost made from manure, hardwood bark, pomace, minced organic vine shoots and fertilizers in reasonable doses, in order to maintain the biological activity of the earth.
Since 2001 it has abandoned the use of chemical herbicides. From the same year, he works the land with the use of light and fuel-efficient tractors.

Between the rows it lets grow every type of plant, so as to have a rich and complex biotype.
The vineyard is only manually processed in every phase, with the aim of achieving a harmonious and airy foliar development.
Exploration of new approaches of biological protection, using preparations based on plant extracts and microorganisms, aimed at reducing the use of natural chemistry (mainly copper and sulfur):
Control of yields by size and control of force. Their harvests are generally lower than the yields defined for the AOC.
Harvest takes place when fully ripe, in order to avoid sugaring, ie a harvest of more than 10,50 degrees potential.
These quality requirements are validated by careful vinification, around two thirds in enamelled steel tanks, less prone to the development of reducing aromas than stainless steel, and a third in oak barrels.

The fermentations are made by the indigenous yeast of each terroir, respecting more their identity and uniqueness.
