Variety: Merlot 100%

A fascinating and disturbing legend surrounds the Chateau. In fact, it seems that this castle was originally the home of a noble warrior, famous for being ruthless and unscrupulous. The nickname “Le Noir” owed it to the color of his armor and to his night raids. Like his master, his henchmen also led a double life: winemakers or soldiers by day and brigands by night.

The Saint Emilion terroir reveals all the finesse that can be achieved by the Merlot, grown on the right bank of the Dordogne.

Soil: it is clayey.

Breeding system: it is the espalier with pruning and guyot.

The vineyard is cultivated by adopting the principles of sustainable agriculture. t

After the harvest, the grapes arrive in the cellar, where they perform a cold maceration for a period ranging from 24 to 48 hours.

Alcoholic fermentation is carried out in stainless steel containers at a temperature of about 26 ° C. After this phase the wine macerates on the skins for another 3 weeks at 30 ° C.

Separated from the marc, the wine carries out the malolactic transformation in stainless steel containers.

Aged in oak barrels for 12 months. The barrels are 33% new, 33% second pass and the remaining 34% third pass. After bottling it remains in the cellar for at least another 18 months.

Ruby red

On the nose it is intense, complex and fine with delicate aromas of red berries. Some spicy and tobacco notes widen the prospectus. There is no shortage of toasted sensations of chocolate and vanilla.

On the palate it is very well designed. In perfect balance between Form and Substance, it reveals a sip where the matter is really conspicuous. The hardness is supported by a sumptuous tannic texture. After swallowing, strawberry and blackberry aromas reach the nasal receptors. The finish is persistent and very elegant.

Accompanies with great effectiveness the fillet and the grilled sirloin, even when together they are Fiorentina. Also noteworthy with classic or spicy stews such as Chili di carne and black beans. Excluding meat you can create a spicy bean soup with which the 2016 Saint Emilion Chateau Jacques Noir goes beautifully at wedding.
