Variety: Cabernet Sauvignon 70%, Merlot 25% and Petit Verdot 5%
The 2011 harvest was carried out strictly in boxes. Once in the cellar the grapes pass two selection tables, so as to discard any imperfect grape. The berries that pass the sorting are discharged by gravity into stainless steel tanks with strict temperature control.
Alcoholic fermentation begins without the aid of selected yeasts, but they exploit the work of the yeasts present on the grapes and especially in the cellar.
After the alcoholic fermentation, and after having concluded the malo-lactic transformation, the wines separately refine variety by variety in barriques for a period of 18 months. The percentage of new woods is always around 80%.
