700 High Altitude Red Blend 2015 Andes Plateau

Cabernet Sauvignon 100%

Ruby red

The nose shows aptitudes to be a great wine, with intense and refined aromas of fruit, with plum and wild blackberry. The notes of pepper are inlaid in a larger framework, made of black pepper, and graphite, of leather and undergrowth.

On the palate it shows even more its elegance, rewarded by a punctual freshness and a convincing tannic texture. The softness constitutes the perfect alter ego of the structure, so the sip is enveloping and at the same time inviting. I insist on the elegance of wine, not only to stand out among all Chileans, but also among those of the world.

Chile has the advantage of being one of the few sites in the world where phylloxera has not taken root. The vines are all ungrafted, that is, without rootstock of American vines. This peculiarity allows to have the grapes in a unique way.

Among the South American wines those of Andes Plateau have the distinctive trait of drinkability.

The grapes are grown in Alcohuaz and Cajòn del Maipo, in the Maipo Valley, right next to the Andes, and at an altitude of 700 meters above sea level.

In the vineyards the soil is of the alluvial type coming from the river bed, and from the landslide of the rocks.

The training system is espalier with guyot pruning, with a yield of 1.5 kg for each plant.

After the harvest carried out by hand, to carry out a rigorous selection, the Cabernet Sauvignon ferments in stainless steel containers, with the use of indigenous yeasts. The other varieties ferment in open vats, with foot pressing and limited pumping over.

Ages in French oak barrels of various sizes, and in a 3000 liter French oak barrel for a period of 15 months. It is then completed in the bottle for another 6 months.
