Amarone della Valpolicella Classico 2015 Montecariano

Variety: Corvina and Corvinone 65%, Rondinella 20%, Molinara, Croatina and Pelara 10%.

Intense ruby ​​bone with garnet areas.

The nose is immediate, rich and intense. It has aromas of blueberry and blackberry jam, rose and violet, then tobacco and undergrowth. The aroma of Boer with rum, nutmeg and other spices further embellish it. Well defined and without smudges, the scents are perceived as fine and elegant. He qualifies gracefully, without shouting loudly.

On the palate it is well structured and creamy. While showing its exuberance it remains clinging to a rigid structure of freshness, minerality and tannin. It gains drinkability, raising its gastronomic value. In the back olfaction aromas of jam and sweet spices.

Amarone della Valpolicella Classico 2015 Montecariano

The vineyards are all located in San Pietro in Cariano, in one of the best areas of the whole Valpolicella denomination.

The harvest is done manually. This is followed by drying of the grapes in traditional fruit rooms at controlled temperature and humidity for a period of about one hundred days.

Between December and January, the grapes are buffed and softly pressed in order not to tear the skins. Alcoholic fermentation takes place in stainless steel containers with continuous and prolonged punching down, oxygenating the must by means of delastage at a controlled temperature between 18 ° -25 ° C for about 50 days.

Refine in wood for about 24 months and 12 months in bottle.

For years he has been practicing the “integrated production” technique. This method aims to have a high-quality bunch, and at the same time safeguard and improve the agricultural environment where the vineyards are set. Integrated agriculture starts from the best choice of planting techniques, in the case of replanting a vineyard, fertilization, pruning, management of the under canopy, pesticide defense, harvesting. Because it must always be remembered that the fruit grows healthy, if the plant lives in a healthy environment. therefore rich in variety of flora and fauna.

The fertilizers used are of organic and mineral origin based on potassium and magnesium, while the soil is left free to grow spontaneous herbs, which are regularly worked mechanically, in the superficial part.

During the spring and summer, the shoots and loosening are carried out manually, and the branches close to the bunch are thinned out, with the aim of letting the air flow between the bunches, to avoid creating the ideal environment for mushrooms of the plant.

In case of need, drip irrigation is used.

To defend against late blight and powdery mildew, bio-technological products are used, therefore mainly copper and sulfur, limiting synthetic products to the floral period.
