From non-certified organic cultivation
Two different parcels contribute: 80% Les Combottes et 20% Derrière le Four.
The soil is calcareous clay.
The vineyard is structured in a semicircle-shaped valley, facing south-east.
Vines have an average age of 50 years, while the density of vines is 10,000 per hectare, with a yield of 3o hectoliters per hectare.
The harvest is carried out only manually, and the fermentation is carried out without adding sulfur dioxide and has a duration of 4 weeks.
Exclusive use of indigenous yeasts, and without temperature control. Performs the malolactic transformation in wooden barrels.
The first aging, the wooden one, ends in 14 months on fine lees and with continuous riddling in traditional Burgundy barriques.

Light ruby red, with subtle shades of orange.
The nose has beautiful aromas of flowers, intense and qualitatively valuable. The violet and the rose are distinguished. For fruits, Cranberry and red currant on all others. Only in order of enunciation, to follow the wood, with all its declinations: the leaves, chestnuts and of course the moss.
Burgundy in full evolution, however with a remarkably elegant olfactory perspective.
On the palate it has remarkable entry and permanence. The same must be said for the balance between hardness and softness. The volume envelops the mouth with creamy sweetness. From the palate to the nose, aromas of flowers and sweet spices are perceived.
Overall it is a great wine, it will grow steadily for many years in the future.
Philippe Pacalet did a completely different job until 1999 when he decided to rent small vineyard plots and start producing wines under his own name.
Within a very few years they jumped to the headlines, for the excellent quality, distinguished by a supreme elegance.
Area information
La Côtes de Nuits takes its name from the village of Nuits-Saint-George and is the northern part of the Côtes d’Or. Inside there are the most famous wine-growing municipalities, because they can boast of having the best and most famous vineyards in the world. There are fourteen municipalities or villages that boast their own name, and six of them produce Grand Cru wines.
Here they are listed from north to south: Gevrey-Chambertin, Morey-St.-Denis, Chambolle-Musigny, Vougeot, Flagey-Échezeaux and Vosne-Romanee.
La Côtes de Nuits is an area of Burgundy, which mainly produces red wines from Pinot Noir.
