The grapes come only from the Contrada Blandano vineyard in the municipality of Viagrande in the province of Catania. The geographical location is on the south-east side of Etna.
Altitude: it ranges from 450 to 550 meters above sea level. The soil is sandy and volcanic in nature.
The training systems are sapling and espalier with spurred cordon pruning.
Planting area: it is 1.10 mx 1.10 m with a density of 8000 plants per hectare for the part planted with saplings; of 2 meters x 0.9 meters with a density of 5000 plants per hectare for the part planted espalier. The average age of the vines is 30 years
At Terra Costantino the harvest is done manually and is done in the last part of September. The yield per hectare is between 40 and 50 quintals, depending on the vintage.
Once in the cellar, the grapes are buffed and left to macerate at low temperature. After pressing, the must is left to stand still at low temperature until it is clarified. Then add the yeasts and raise the temperature to 14 ° – 16 ° C so as to start the alcoholic fermentation.
Without carrying out the malo-lactic transformation, it refines in the same stainless steel containers for at least 12 months and a further 24 months in the bottle.
