Variety: 100% Pinot Noir

Reasoned agriculture

The term Cabottes in Burgundy indicates a stone construction inside the vineyard, where work tools were stored.

The grapes are grown in several vineyards within the Haute Cotes de Nuits denomination.

Soil: it’s mainly calcareous and clayey.

After the harvest, carried out manually, it macerates on the skins at very low temperature for 10 days. Subsequently the alcoholic fermentation begins, with repeated pumping over of the must on the cap of the marc.

Ruby red color.

The nose has intense and fine aromas of berries, with red and black currants, (grown in France under the name Cassis), pomegranate and grenadine. Flowers are also added with violet and rose. The choice to refine it exclusively in steel enhances the aromas of fresh fruit, which become fleshy and rich.

On the palate it is fresh and mineral, but at the same time well endowed with softness, with creaminess and warmth of the alcoholic degree. Voluminous and extremely drinkable, it reaches equilibrium in an instant. Also some spicy notes, more tending to spicy, are added to the whole. After leaving the palate there are aromas of blackberry and flowers.

On the whole of the three aspects Julien Cruchandeau designs an excellent Pinot Noir, simple in intentions, but refined in execution. Perfectly attributable to the territory of origin, and above all to the variety of belonging.
