Ruby red color.

The nose has a highly respectable olfactory profile with classic aromas of berries in general and red currant in particular. Follow the notes of red fruit from the stem, and the more complex ones of the undergrowth. He begins to shyly feel the “merde de Poulle”, which will characterize it in the years to come, making it a great Pinot Noir of Burgundy. Overall, the perfumes are clean, precise and multifaceted.

On the palate it has so much class that it can be given away. In excellent balance between softness and hardness, it stands out for the perfect interlocking between its components. In the retro olfation aromas of sweet spices reach the nasal receptors, so as to make the whole piece very pleasant. It has great ability to improve getting older.

Mercurey La Framboisière Monopole 2017 Faiveley

Domaine Faiveley applies in all its land a reasoned agriculture, for the respect of the environment. It conducts in an organic way 75% of its vineyards in Nuits-Saint-Georges.

Using modern meteorological instruments, and using mathematical models, they effectively manage to anticipate diseases, so that they are treated in advance and therefore much less than the average.

They are committed to the conservation and maintenance of the natural environment, facilitating biodiversity, and the unique expression of each terroir. Arano in depth to increase microbial life and make the minerals typical of each area available to plants. Hand pruning and scraps of pruning only left on the ground to allow recycling and nourishment of the earth.

The water used for rinsing and cleaning the bottles is recycled to irrigate the soil.

Each parcel has a farmer who cares, so as to have a relationship of maximum knowledge of the territory.

They almost exclusively use materials produced in Burgundy and all the people who work at every stage of production live in Burgundy.

The domaine also has 7 hectares of woods where the “grand oak” secular Mercurey Les Mauvarennes is cultivated, so as to encourage the presence of different species of birds and insects.

Harvest is done manually and the alcoholic fermentations originate from indigenous yeasts present on the grapes.

All the decantings are made for gravitational fall without using pumps.

Aging takes place in French wooden barrels for a period ranging from 12 to 18 months.
