Description

Ruchottes-Chambertin Grand cru 2014 Philippe Pacalet

Variety: Pinot Noir 100%

From non-certified organic cultivation

Produced with the finest grapes grown exclusively in the Grand Cru Ruchottes Chambertin vineyard.

The soil is calcareous clay resting on a rocky slope composed of limestone in prevalence and clay.

The orientation of the vineyard is towards the south-east, so as to have a fresh and airy climate.

Vines have an average age of 47 years, a distribution on the ground of 10,000 plants per hectare, and a yield of 30 hectoliters per hectare.

The harvest takes place strictly by hand, to make a first quality selection. Alcoholic fermentation is carried out by indigenous yeasts and without adding sulfur dioxide. Normally this processing ends in a month and is always carried out without controlling the temperature of the must.

The malolactic transformation takes place in wooden barrels, where it is then refined for a minimum period of 17 months on fine yeasts in Burgundy barriques. During this time period, remuage is carried out periodically.

Ruchottes-Chambertin Grand Cru 2014 Philippe Pacalet

Light ruby red with beautiful orange veils.

On the nose it is intense, very complex and with an extremely elegant finesse. All in all a Grand Cru from Burgundy. If we want to define them, we can list the red berries, with red currant, the white one and the cranberry. Even variegated notes of undergrowth, fur and sandalwood make the prospect even more complex and fascinating.

On the palate it is immensely large, the exact expression of the Cru to which it belongs. Excellent balance between the parts, with minerality and correct tannin texture to stand out for its hardness. Creamy and voluminous, as only a Grand Cru can be.

Overall it is an excellent and exciting wine, which will improve for many years in the future.

Philippe Pacalet did a completely different job until 1999 when he decided to rent small vineyard plots and start producing wines under his own name.

Within a very few years they jumped to the headlines, for the excellent quality, distinguished by a supreme elegance.
