Valpolicella Superiore Ripasso 2016 Dal Cero

Variety: Corvina, Rondinella and Molinara

The three varieties that compose the Valpolicella Superiore ripasso Dal  Cero come from several vineyards located in the San Briccio area, in the municipality of Lavagno, in the province of Verona. Vineyards are located at
average altitude of about 300 meters above sea level.
The rearing systems are the Veronese traditional pergola and the counter espalier with Guyot pruning.

Harvest is done manually, and varies according to the vintage, between the last week of September and the first of October.

Yield per hectare is 70 quintals

As soon as they reach the cellar, the grapes are rasped and pressed to carry out the alcoholic fermentation in
stainless steel containers for 10 to 12 days. Once the alcoholic fermentation is complete, the wine is separated from the skins and
stored in steel tanks until January. In that month the dried grapes of Amarone are pressed.

Once the Amarone has been fermented, the marc is immersed in the Valpolicella for a period of 7/8 days

Aging for 12 months starts in tonneaux and partly in 20 hectolitre barrels.

Intense ruby ​​red color.

The nose has aromas of ripe fruit, and jam. Follow the sweet spices and some stretches of undergrowth and aromatic herbs that make the prospect complex.

At Palate is supported by a good texture of hardness, so that the softness, albeit well defined, do not lord it. Voluminous and satisfying the taste. In the retro olfation aromas of fruit and tobacco arrive. Persistent the memory that leaves.

Accompanies with extreme effectiveness dishes of braised and roasted with polenta. Even the feathered game, like the larded thrushes.
