Chablis Grand cru Vaudesir 2017 Bernard Defaix
Located between the vineyards classified Grand cru Bougros, Preuses, and Grenouille, Vaudésir covers almost 15 hectares.
Characterized by a steep terrain, with less amount of limestone in the soil, it expresses finer wines than the other Grand cru.
Vinified in barrique, where it is aged for 18 months, with continuous and regular bâttonage. The aging cellar is ancient and equipped with vaulted arches. Here the temperature is naturally low, and during the winter the tartrates fall without forcing them, making the wine much more stable.
Vaudesir, among the wines classified as Grand Cru, is the one that has the capacity to be both fat and extremely elegant. As the wine ages, it manages to become one of the best representations of Burgundy in white.
