Description

Chablis Vielle Vignes 2016 Bessin

Variety: Chardonnay 100%

Straw yellow color

Richly designed nose with wonderful aromas of flowers, such as mimosa and broom. There is certainly exotic fruit with banana, pineapple and mango. For local fruit, note the white peach. Even some ideas of the sea, of saltiness, of a windswept harbor dock.

Excellent balance between hardness and softness, with the second to give substance and thickness to the whole. Arrive aromas of fresh fruit and citrus fruits with yellow, lemon and cedar in particular. Persistent

Excellent with oysters, seafood, cheese and grilled vegetables.

Chablis Vielle Vignes 2016 Bessin

Since 1880 there have been 4 generations leading the Domaine. He is currently Jean Claude Bessin and his wife Evelyn, also a daughter of art, because his father was a winemaker. Their first harvest was 1992.

Domaine Bessin has an extension of just over 12 hectares all planted in Chardonnay, 5.25 of which in Chablis, 5 hectares divided over the 1er cru Montmains, La Forêt and Fourchaume and finally 2 hectares of Grand Cru Valmur.

The vineyards that compose the chablis are aged between 40 and 70 years.

Cellars and buildings for production are located in La Chapelle-Vaupelteigne, a small village 5 kilometers north of Chablis.

The harvest, carried out manually, always lasts around ten days. As soon as they reach the cellar, the grapes are immediately placed in a pneumatic press for a delicate and long extraction.

Vinification is then carried out in glazed tanks and equipped with a thermal regulation system to precisely control the fermentation, which occurs with native yeasts. The wines perform malo-lactic transformation and then refine on noble lees for a period of 15 months.
