Verdicchio dei Castelli di Jesi Classico Riserva Dino 2017 Filodivino
Variety: Verdicchio 100%
With the 2018 vintage certified organic.
The grapes are grown in the classic area, in a single vineyard located in the municipality of San Marcello in the province of Ancona. Plants are over 50 years old. The sixth plant includes 2500 plants per hectare.
Last harvested, the grapes destined for the production of Verdicchio Riserva Dino and Superiore Filotto, ferment in stainless steel containers, leaving the different parcels separate. After carrying out the malo-lactic transformation, the 2017 vintage was refined, again in steel, for a period of 16 months. Filtration and the last part of the refinement follows: the one in the bottle where it improves for another 18 months.

Straw yellow color.
The nose has defined aromas of broom and mimosa flowers, fresh citrus fruits, and of different types. In addition to green lemon, also chinotto and bergamot. The juicy fruit ripens, and in particular the medlar. The camphor of 2015 is maintained, but this time aided by the scents of the sea. That brackish pier, wet rock, seaweed and limpets.
Wonderful synthesis between the round perfumes of 2014 and the most ethereal ones of 2015, for a final result of extreme class.
On the palate, it is conspicuous yet with truly impressive traits of elegance. Very mineral or very vertical, whatever you want, it places the set of hardnesses to sign a picture that leaves no doubts. Likes and excites. Since after so much talk about hardness, we find, to be honest, the balance. The merit is of the substance, voluminous and creamy.
The three aspects find the conjunction on a wine that ranks at the top of the denomination, and on the whole panorama of Italian white wines.
For food pairings, you are spoiled for choice: from seafood and raw fish, to Catalan lobster, or baked sea bass with potatoes and parsley. Not to be underestimated with cod. Excellent on aged cheeses.
