Variety: Sauvignon Blanc 100%
The grapes come from different vineyards, in the hamlet of San Paolo in the municipality of Appiano.
After the harvest, the alcoholic fermentation is carried out in stainless steel containers at a controlled temperature.
It refines in the same containers, on the residues of yeasts, placed in continuous suspension, for a period of 5 – 7 months. Does not carry out the malolactic transformation.

Straw yellow color with light green reflections.
At the nose has classic aromas due to the variety. Thus we perceive the elder flowers, celery, tomato leaf and among the small aromatic herbs mint. Do not miss the exotic fruit and traces of white flowers, especially the white rose.
The palate confirms the expectations. The entrance is of good consistency, and stretches with elegance. Hardness, represented by acidity and minerality provide it with excellent structure and consequently a pleasant drinking effect. In balance between the various forces, it appears as a whole of excellent workmanship. Aromas of tropical fruit and delicate flowers reach the nose from the oral canal. Persistent.
Easily combined with different dishes, from vegetables to fish, to delicate cheeses. Excellent with asparagus, both steamed and risotto.
San Paolo Wine Cellar was founded in 1907: the members are 36 winemakers from San Paolo, Riva di Sotto, Monte and Missiano. In 2007, after one hundred years from the foundation, the members have become 215. On that occasion the Passion line is presented, where the excellence of their wines is grouped.
The chanting producers of San Paolo in the last 10 years is one of the wineries that has had one of the best increases in the quality of their wines, also and above all in the improperly called line base.
