Chablis 1er cru Les Vaillons 2015 Bernard Defaix

In the vineyard there are young and old vines, which are gathered together and together contribute to producing the wine.

After the harvest, the Defaix conduct alcoholic fermentation exclusively in stainless steel containers.

The Vaillons cuvée is aged in the same containers on the fine lees for a period varying from 8 to 12 months.

Straw yellow with light gold shades.

On the palate it has aromas of flowers such as magnolia, daisy and mimosa. There is no lack of citrus fruits with lemon, lime and grapefruit. The fruit is represented, from the apple and from the medlar. Even sensations of butter, vanilla and spices broaden the copious prospect.

On the palate it is supported by enviable hardness, so that the volume of softness rests lightly on the whole. The cuvée of young and old vines gives them both aspects in harmony. The memory that leaves itself is persistent. In the back smell aromas of citrus, spices and subtle marine notes arrive.

Bernard Defaix, together with his two sons Sylvain and Didier, are the third and fourth generation of winemakers who take the lead of the company. They have the property of 25 hectares in the Chablis denomination. Eleven of these are at Premier Cru, Côte de Lechet, Les Vaillons and Les Lys, 12 hectares of Chablis and finally 2 hectares of Petit Chablis.

They cultivate the vineyards following the biological principles. For decades now they have not used herbicides, to increase the presence of useful insects. In some cases they use the technique of sexual confusion, distributing in the pheromone vineyards. In doing so, they prevent the males of the harmful insects from finding the females to fertilize them and consequently to deposit the eggs for their proliferation
