Grapes come from the vineyards surrounding the ancient Corte Giacobbe, in the municipality of Roncà. The vineyards are located on the slopes of the extinct volcanoes, Calvarina and Crocetta, east of Soave. This is a best area par excellence, because thanks to the minerals extracted from the volcanoes over the years, the wines have truly unique characteristics.
Type of breeding is between the traditional Soavese Pergola and the Guyot pruning espalier.
Plant density varies from 4,000 to 5,000 plants per hectare.
Harvest is conducted manually, and under normal conditions takes place between the second and third week of September.
Grapes arrived in the cellar undergo a cold pellicular maceration for a whole day at 5 ° C.
After that time, alcoholic fermentation begins in stainless steel containers at a controlled temperature of 16 ° C.
Refine for a minimum period of at least three months in the same fermentation containers. They conduct mass stirring (Batonage) once a week to keep yeast residues in suspension.
After the thinning, it remains in the cellars for at least a further month and a half.

The color is pale straw yellow.
The nose is fruity with aromas of apple, melon and yellow peach. There is no shortage of flowers with daisy and gerbera, and more generally those light sensations of spontaneous lawn flowers.
On the palate it is linear and without smudges, with a marked minerality. Obvious consequence of the volcanic soil in which the vine plants sink the roots. Good persistence in the mouth, as well as the final one as soon as the wine is swallowed.
It goes well with raw vegetables, carpaccios and fish tartare. Excellent also with first courses of delicate stuffed pasta. Very effective also as an aperitif, with canapés and taggiasca olives in brine.
Excellent white wine of the Veneto region.
